I purchased this to use for candy making this past Christmas. We made hard candy, fudge, Turkish delight, and sponge candy without any problems. However, sometimes it seemed to show a significant slowing in the rising temperature when it got up above 300*....being a novice candy maker, it's unclear whether that is just the way sugar works, or if the thermometer was defective. I assume that's the way candy works, because it all came out delicious!
A tip for all candy-makers: Be sure to use a thermometer AND visual descriptors/cues (ie: color change, texture change, etc) to determine when your candy is ready.
